Greens! Turkey Burger

This turkey burger is perfect for a mixed grill night when you want to change up your burger routine. Top it off with lettuce, tomato, onion, and pickles on a whole grain bun, or wrap it up in lettuce or lightly blanched collards to go bun-free and add an extra dose of green to your Greens!

Ingredients

Serves 4 people
    For the Burger
    • ¼  cup Greens! Fonio Pilaf, cooked according to package and cooled
    • pound lean ground turkey
    • ½  medium red onion, grated
    • ½  cup chopped spinach
    • tablespoon chopped cilantro
    • teaspoon garlic powder
    • Salt + pepper to taste
    • tablespoon avocado oil
    Burger Fixin’s (optional)
    • head iceberg lettuce
    • beefsteak tomato
    • red onion
    • Sliced pickles
    • Alfalfa sprouts
      For the Avocado schmear
      • ripe avocado
      • tablespoon cilantro
      • teaspoon fresh lime juice
      • teaspoon olive oil
      • teaspoon red pepper flakes
      • Salt + pepper to taste

      Preparation

      • 01 .  

        In a large mixing bowl, combine all burger ingredients and mash together using a fork. Shape mixture into four ¾-inch thick patties using your hands.

      • 02 .  

        Heat a cast-iron skillet over medium-high heat and add avocado oil once hot.

      • 03 .  

        Add all four burgers if they fit without crowding the pan, otherwise work in batches, and sear for six minutes on each side, or until they reach 160°F internal temperature. Remove from heat and let rest for 3 minutes.

      • 04 .  

        While your burgers rest, prepare the avocado schmear. Combine all ingredients in a small bowl bowl and mash with a fork.

      • 05 .  

        Assemble your turkey burgers with the condiments of your choice and a whole grain bun or lettuce wrap. Enjoy!
