Afro-Funk French Onion Dip

When I first heard about dawadawa, I was blown away by the smell. Where some might find it to be something new and unfamiliar to the nose, I was instantly drawn into taking a deeper whiff of the dried fruit. It has a funky, unctuous flavor and smell, with hints of coffee, chocolate, mushroom, and more. I imagined so many things to make with it, and when I got my hands on the Afro-Funk Spice Rub & Dip Mix I knew immediately what I wanted to make! The deep flavor of the spice blend goes perfectly with the sweetness of a caramelized yellow onion, and even adds a sort of citrusy brightness to them - not quite like a lemon or lime would, but more similarly to sumac or baobab. The rich flavor can be a lot to folks not used to it, so I knew adding it to a creamy dip like sour cream or yogurt would soften the flavor a little bit and it works perfectly. Pair this dip with your favorite fonio chip, and enjoy!

Ingredients

  • 2 tablespoons neutral–flavored oil
  • 1 ½ cups yellow onion, sliced thinly
  • ½ cup water
  • 1 teaspoon Afro-Funk Spice Rub + more for garnish
  • 1 cup sour cream or plain greek yogurt
  • ½ cup mayonnaise
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Kosher salt and freshly ground pepper to taste
  • Green onion or chives for topping

Preparation

  • Step 1
    In a small pan over medium heat, warm the oil for about 1 minute, or until it is hot but not smoking. Add the sliced onions and stir continuously for about 10 minutes, until the onions have softened and begun to caramelize to a light brown color.
  • Step 2
    Add Afro-Funk Spice Rub and stir well, continuing to cook and stir the onions for an additional ten minutes until they reach a dark brown color and have softened completely. If your onions begin to stick or burn, occasionally add 2 tablespoons of water at a time throughout the cooking process. This also helps pick up any fond (brown bits of color) on the bottom of the pan.
  • Step 3
    Remove the onions from the heat and let them cool on a plate or baking tray, spreading them out evenly so they cool more quickly in the refrigerator.
  • Step 4
    In a medium-sized bowl, add the remaining ingredients and mix well. Once the onions have cooled, stir them into the cream mixture. Season to taste, and garnish with an additional sprinkle of the spice rub, and green onions. Serve with Fonio Chips or veggies and enjoy!
