Move over baked oatmeal, baked fonio is here to stay! This baked fonio recipe is an easy one to adapt and make for meal prepping ahead of time. Make your weekly batch of fonio and set aside ¼ cup of cooked fonio per person to make a deliciously easy breakfast meal that can be pre-portioned and then baked in the morning while you get ready for work, school, or the gym. Adding in milk (dairy or plant-based) makes the precooked fonio deliciously creamy, and topping with a little coconut sugar before baking leaves a creme brulee color and texture on top. Add a few berries or sliced fruit and you have a full meal ready in a few minutes. Adding peanut butter, bananas, or other ingredients to the baking ramekin is also a great way to incorporate more flavor and nutrients into the dish as well.

Ingredients

  • cooking spray
  • ¼ cup cooked and cooled Yolélé fonio
  • ½ cup milk
  • Pinch of kosher salt
  • Pinch of cinnamon
  • 2 teaspoons coconut sugar
  • Fruit for garnish (optional)

Preparation

  • Step 1
    Preheat your oven to 375F. Spray an oven-safe baking ramekin with cooking spray and set aside. In a small pot, add the cooked fonio, milk, salt, and cinnamon and stir well. Bring up to a simmer over medium heat for about 3-5 minutes until fonio is warmed through and creamy.
  • Step 2
    Remove from heat and pour fonio into the coated ramekin. Top with coconut sugar (or sugar of your choice) and bake for 5 minutes until sugar has melted.
  • Step 3
    Carefully remove the ramekin and let cool for a few minutes before handling it. Top with fresh fruit and enjoy.
