This crunchy fonio frico is the perfect snack. It’s great on its own, but also when it’s crumbled in salads and on top of soups, and can also be formed into cups that can be filled to make a professional looking appetizer. The parmesan cheese adds salt and works perfectly with the nuttiness of the fonio, and baking the frico makes the frico extra crispy without using any additional oil. Play around with using different types of cheeses, spices, and even our fonio pilafs for a spin on this classic snack.

Ingredients

  • 1 cup cooked fonio
  • 1 ½ cups shredded parmesan cheese

Preparation

  • Step 1
    Place an oven rack near the top of the oven and preheat oven to 375℉. Line a 9”x13” baking sheet with parchment paper or a silicone baking mat and set aside. In a bowl, mix cooked fonio and parmesan cheese together well.
  • Step 2
    Either spoon the fonio and parmesan cheese mixture onto the prepared baking sheet and shape into circles about 1-2in in diameter, OR , pour the entire contents of the bowl onto the baking tray and gently flatten out, spreading the frico mix in a thin layer across the tray.
  • Step 3
    Bake frico on the top rack for 20 minutes or until golden brown. Carefully remove and let cool for 10 minutes until crispy. Serve immediately or store in an airtight container with sheets of parchment paper in between pieces of frico.
