Ingredients
- 3-4 ripe, small avocados
- ½ small red onion, finely diced
- 2 roma tomatoes, seeded and diced
- 3 tablespoons chopped fresh cilantro
- 1 jalapeno pepper, seeds removed and finely diced
- 2 garlic cloves, minced
- 1 lime, juiced
- kosher salt to taste

Step 1
Slice the avocados in half, remove the pit, and scoop them into a mixing bowl. Mash gently with a fork until the consistency is slightly smooth but still a little chunky or to the consistency of your liking.

Add the diced onion, tomato, cilantro, jalapeno, and garlic to the bowl and gently mix to incorporate. Finally, add lime juice and salt to taste, and mix. Serve immediately or refrigerate, by adding a sprinkle of lime juice to the dip on the top, but don’t mix. Press a piece of cling wrap onto the guacamole to create a barrier between the dip and the air - this will ensure the guacamole doesn't oxidize and stays green and fresh before serving. Enjoy with your favorite fonio chip or veggies to dip.
