Dawadawa, a fermented seed from the drought-resistant African locust bean tree, with a rich, complex umami flavor–is the star of our Afro-Funk Fonio Pilaf, along with savory scallions and earthy mushrooms. Serve it with roasted veggies and kebabs.

Error:

Fonio, salt, contains 2% or less of onion, locust bean powder, spices, dried yeast, sunflower oil, garlic, scallions, mushrooms.

Stovetop

  1. In a pot with a lid, coat contents of package well with 1 tablespoon of oil (optional). Turn heat to high, add 1 ⅓ cup of water and bring to a boil. 
  2. Stir, cover and turn heat to low. Cook for 1 minute, then turn off the heat and let it sit, covered, for 5 minutes.
  3. Fluff with a spoon or fork, and top it with whatever juicy, saucy food you’re serving!..

Microwave

  1. Mix 1 package with 1 ⅓ cups of water in a large microwaveable bowl.
  2. Cover tightly and microwave for approximately 2 minutes.
  3. Let sit covered 3-5 minutes, then fluff with a fork. Serve hot or cold, with anything or on its own.

These preparations will give you a light and fluffy fonio. Too wet? Cook a bit longer. Too dry? Add a spoonful of water, cover, and cook a minute more. Fonio never embarrasses the chef! Or for a creamier texture, use more liquid and stir it up.
