Vibrant dark leafy greens are a regular feature in West African dishes. This fonio pilaf pairs nutrient-rich moringa with a bright and herbaceous blend of leeks, scallions, and parsley. Serve with big salads, seafood, or mixed into a veggie burger.

Error:

Fonio, spinach, salt, onion, contains 2% or less of dried yeast, moringa leaf powder*, sunflower oil, organic lemon powder (organic rice maltodextrin, organic lemon juice concentrate, organic lemon oil), leeks, garlic, scallions, spices. *consultant a physician before consuming moringa if pregnant.

Stovetop

  1. In a pot with a lid, bring 1 ⅓ - 1 ½ cups of water to a boil, then stir in contents of the package. Bring back to a boil In a pot with a lid, coat contents of package well with 1 tablespoon of oil (optional). Turn heat to high, add 1 ⅓ cup of water and bring to a boil. 
  2. Stir, cover and turn heat to low for 1 minute.remove from heat.
  3. Let sit covered for 5 minutes, then fluff with a fork. Serve hot or cold, with anything or on its own.

Microwave

  1. Mix 1 package with 1 ⅓ cups of water in a large microwaveable bowl.
  2. Cover tightly and microwave for approximately 2 minutes.
  3. Let sit covered 3-5 minutes, then fluff with a fork. Serve hot or cold, with anything or on its own.

These preparations will give you a light and fluffy fonio. Too wet? Cook a bit longer. Too dry? Add a spoonful of water, cover, and cook a minute more. Fonio never embarrasses the chef! Or for a creamier texture, use more liquid and stir it up.
