True confessions: Chips are not a traditional usage in West Africa for fonio, or for anything else! But in trying to bring fonio to a wide audience, we knew we had to use it in a way that would connect with LOTS of people, and that would be noticeable in a grocery store. Snacks seemed like a good vehicle to capture our flavors, and a good way to use this most impactful little grain.In this chip we introduce baobab fruit’s citrusy tartness (so beloved all over West Africa), along with bright green moringa, leaves from a small tree that provides dappled shade and dense nutritional value.
