Salty, sweet, creamy, and crunchy - these Chocolate Fonio Candy Crisp Bars are a little bit of everything in one bite. Crisping fonio in the oven gives the grain a wonderfully deeply nutty flavor and gives the chocolate bars a crunch reminiscent of your favorite puffed rice candy bars. Add in your favorite candy and chopped nuts to mixed chocolate and you’ve got a treat that’s completely customizable for all the sweet snack lovers in your life.

Ingredients
- CRISPED FONIO
- 1 cup Yolélé Fonio, cooked according to the package directions
- 2 cups water
- pinch of salt
- CHOCOLATE BAR
- 4 cups of chocolate chips
- ¼ cup choice of candies, roughly chopped (besides the gummy worms)
- ¼ cup mixed nuts, chopped
- pinch of sea salt – optional
Preparation

Step 1
Preheat oven to 170℉ .

Step 2
Spread out cooked fonio onto a baking sheet lined with parchment paper and bake in the oven for about 30 minutes or until fonio feels dry to the touch.

Set oven to broil and allow fonio to toast for 45-60 minutes, stirring the fonio with a spatula halfway through until the fonio has browned and feels crisp- the fonio should be similar to cooked granola in texture. Remove from the oven, set aside, and let cool for 10 minutes.

Fill a medium sized pot over halfway with water. Over medium-high heat, bring the water to a boil. Once the water is boiling, carefully place a heat-safe bowl over the pot and pour in the chocolate chips. Stir gently until the chocolate has melted completely, or about 10 minutes.

Once the chocolate has melted remove the bowl from the heat and fold in your cooled fonio crisp. Carefully pour the chocolate and fonio mixture onto a parchment or wax paper lined 13x18 size baking tray or candy mold.

Spread your chopped candy and nuts in an even layer over the chocolate and fonio - feel free to also sprinkle a little sea salt on top as well for an extra bite of flavor.

Place the tray in the refrigerator for 30 minutes to 1 hour to allow chocolate to set before removing. Break apart or cut the chocolate fonio crisp bar to serve and store in an airtight container or bag for up to a week.
