This is the easiest, most adaptable fonio recipe ever! Take fonio (or even fonio pilaf) and layer into the bottom of a food-safe container with a lid. Add your favorite Waldorf (or other) salad toppings, close the lid, and refrigerate until you’re rady to use it. All you have to do is add your dressing and shake, and you have a filling delicious, easy-to-clean-up meal perfect for your lunchbox or if you’re on the go. We’ve been told Fonio Chips makes a delicious crunchy topping too, but don’t just take our word for it-try it yourself!

Ingredients
- ¼ cup cooked and cooled Yolélé fonio
- ¼ cup shredded cooked chicken
- ¼ cup cut grapes
- toasted pecans (optional)
- Lettuce or leafy greens (romaine, spinach, butter, etc)
- ¼ cup salad dressing of your choice
Preparation

Step 1
In a small mason jar or similar food-safe container with a lid, add and layer all ingredients, except for the dressing, in order. Close the lid and refrigerate.

The next day, take the salad jar and dressing out. When ready to eat, add dressing to the jar then close the lid. Shake the container vigorously until all ingredients are coated with dressing and mixed well. Enjoy!
