These cheesy pimento grits just scream summer! They're a quick way to spruce up your breakfast or make a great lunch or dinner addition. Pimento peppers can be found jarred in most grocery stores now, but feel free to use diced roasted red bell peppers if you have a hard time finding them. Also, a plant based shredded cheese would work perfectly in place of dairy as well. Add a little turmeric for a pop of color and you have a great looking (and tasting) bowl of fonio grits!

Ingredients
- 2 cups water or vegetable stock
- ½ cup fonio
- 1 cup shredded cheese
- 2 tablespoons chopped pimento peppers
- kosher salt
- ground black pepper
- 1 teaspoon ground turmeric (optional)
- splash of heavy cream
Preparation

Step 1
In a pot, bring 2 cups of water or stock to a boil and whisk or stir in fonio. Cook uncovered for about 5-8 minutes stirring often until fonio is tender and creamy.

Add in cheese and peppers and season to taste. Add the optional turmeric for a nice color and additional depth of flavor, and stir to incorporate all together. Stir in a splash of heavy cream. Serve immediately (perhaps under our Fonio Flour Fried Fish) and enjoy.
