These fonio fritters made with Yassa! Fonio Pilaf are quick and easy to make. They make a great side dish, quick snack, or even a full meal. We use regular all-purpose flour and egg here, but feel free to use plant-based and gluten-free options as substitutions as well. Switch up the filling of fritters – add cheese, green onion, diced celery, tinned fish, fresh herbs, canned beans – the options are really limitless and you can still get them cooked in 20 minutes or less. Most ingredients will pair perfectly with the citrusy flavor of the Yassa pilaf. We paired ours with Egunsi Foods Obe Ata tomato soup and Hot N Saucy’s Garlic N Pepperoncini hot sauce but they’ll go great with a creamy remoulade, tangy sour cream, or even ketchup.

Ingredients

Serves 2 people
    • ½  cup Yassa! Fonio Pilaf, cooked according to packaging and cooled
    • tablespoons all purpose flour
    • large egg, well beaten
    • tablespoons finely diced red bell pepper
    • tablespoons freshly chopped parsley
    • Pinch of paprika
    • teaspoon Hot N Saucy Garlic N Pepperoncini hot sauce
    • ½  cup neutral flavored oil

      Preparation

      • 01 .  

        In a small bowl, mix all of the ingredients together, except for the oil, and form into four small patties, about 2 inches by 2 inches around.

        Place a small non stick frying pan over medium heat, and pour in oil. Let heat for about 3-5 minutes, until oil is shimmering and a drop of water pops when it hits the hot pan.

      • 03 .  

        Carefully add your patties into the hot oil, and fry for 5 minutes or until golden brown. Flip, and cook for an additional 5 minutes until patties are brown and crispy. Transfer to a paper towel lined plate and serve hot with your favorite soup or dipping sauce.
