Jollof Fonio with Marinated Sirloin

Jollof is one of the most beloved dishes across West Africa and across the world, and everyone everywhere makes theirs a little differently. It is a mixture of tomato, onions, and peppers cooked into fluffy rice (or fonio!). It can be made with only vegetables or with the addition of seafood and/or meat, so it’s a perfect dish to customize for any family or gathering. Using our Jollof Fonio Pilaf, we take out most of the guesswork and, in this recipe, add some succulent lime marinated beef to make this dish hearty and even more delicious!

Ingredients

  • 1 pound sirloin cut into small cubes (1 in)
  • 2 tablespoons lime juice
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 ½ tablespoons neutral flavored oil
  • 1 small yellow onion, diced
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 1 teaspoon tomato paste
  • 1 oz canned tomato sauce or puree
  • 1 package Yolélé Jollof Fonio Pilaf
  • 1 cup water
  • ¼ cup thinly sliced green onion for garnish
  • ½ pint grape tomatoes, cut in half for garnish

Preparation

  • Step 1
    In a bowl, add sirloin, lime juice, salt, and pepper and mix well. Cover the bowl and refrigerate so that the beef can marinate for 2-3 hours. After the beef has marinated, remove it from the refrigerator and let come to room temperature for about five minutes.
  • Step 2
    Heat up oil in a large sauté pan over medium high heat for about 30 seconds, then add the beef. Brown on all sides until cooked through, about five minutes. Remove beef and set aside.
  • Step 3
    In the same pan the beef was cooked in, reduce heat to medium. Add onions and bell peppers. Sauté for about 5-10 minutes until the onions are translucent, and the peppers have softened, carefully stirring so that the vegetables don't scorch.
  • Step 4
    Add tomato paste, stir, and cook for about one minute. Then add tomato sauce, Jollof Fonio Pilaf, and water. Stir well and bring to a boil for 2 minutes. Reduce heat to low, and add beef back in.
  • Step 5
    Turn off the heat, cover and let fonio continue cooking for about 5 minutes. Serve with tomatoes and green onion for garnish and enjoy!
