Mmmm….creamy tomato bisque is the soup of my dreams whether it’s warm or cold out. It’s a classic, nostalgic soup that always brings me back to my childhood days of coming home from school and having a bowl with a grilled cheese sandwich on the side! But this tomato bisque recipe isn't your ordinary soup-from-a-can recipe. I used canned crushed tomatoes, herbs, and spices to really boost the flavor and texture of the dish and I serve it with crunchy fonio chips and parmesan cheese to add the perfect amount of crunch and seasoning to the soup. My favorite thing about using fonio chips as a topping? They don't get soggy in the bowl, so you can enjoy those extra crunchy cheesy bits until the very last spoonful!

Ingredients
- TOMATO BISQUE
- 2 tablespoons unsalted butter or oil
- 2 teaspoons minced garlic
- 2 tablespoons tomato paste
- 14 oz crushed tomatoes
- ¼ teaspoon paprika
- ½ cup heavy cream
- Salt to taste
- GARNISH
- ¼ cup shaved parmesan cheese
- 1 tablespoon rougly chopped fresh herbs (parsley and/or basil)
- ¼ cup crushed Yolélé Sea Salt Fonio Chips
Preparation

Step 1
In a medium-sized pot, add butter and heat over medium heat for about 1 minute. Add minced garlic and saute until fragrant, about 1 minute.

Add tomato paste and stir and cook for an additional 2-3 minutes. Then add crushed tomatoes, paprika, heavy cream, and salt to taste and stir or whisk well until all ingredients are incorporated. Reduce heat to medium-low, cover the pot, and let simmer for about 10 minutes, or until the bisque is slightly thickened.

Step 3
Serve bisque in a bowl and top with crushed fonio chips, parmesan cheese, and fresh herbs. Enjoy!
