Fonio Jackfruit Bites with Spicy Mango Sauce

Spice up your next party with Jackfruit Sofrito Fonio Bites and satisfy your sweet and savory tooth. These bites get a kick from the Spicy Mango Pepper Sauce, but have no fear, you have total control over the spice level of the sauce. You can remove the pith and seeds (for less spice), or keeping them for an extra fiery mango sauce. These fonio bites are full of garlicky and delicious onions, peppers and jackfruit.

Ingredients

  • SAUCE
  • 1 yellow bell pepper, seeded and halved
  • 1 scotch bonnet pepper, cut in half
  • 1 tablespoon olive oil
  • 2 tablespoons dijon mustard
  • 1 mango
  • @burlapandbarrel Cured Sumac for garnish
  • BITES
  • 1 tablespoon olive oil
  • 6-10 garlic cloves, pounded into a paste
  • 1 tablespoon dry oregano
  • ½ white onion chopped
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 1 tablespoon salt + more
  • 1 15 oz can jackfruit, drained
  • 2 teaspoons tomato paste
  • 2 cups cooked Yolélé fonio
  • 2 eggs
  • 2 teaspoons baking powder
  • 2 cups canola or vegetable oil for frying

Preparation

  • Step 1
    Toss yellow bell pepper + scotch bonnet with olive oil on a baking sheet. Place in the oven and broil for 10 minutes, flipping halfway through. Turn off the oven and let peppers rest inside until you’re ready to make sauce.
  • Step 2
    Add jackfruit, as it cooks pull it apart using two forks. Add tomato paste and stir. Cook for another 2-3 minutes.
  • Step 3
    In a large mixing bowl, add fonio and the jackfruit mixture. Mix until fully incorporated. Cool in the fridge for 15 minutes. While the fonio mixture is cooling, add the peppers from the oven, mustard, and mango to a blender and pulse on high until you get a smooth and silky texture. Set aside.
  • Step 4
    Remove your fonio mixture from the fridge. To form bites scoop 1 tablespoon of the mixture into your hands. Roll into a ball and place on a plate, separating layers with a paper towel. Set in the freezer for 10-15 minutes.
  • Step 5
    Whisk together eggs, baking powder and a pinch of salt in a small bowl.
  • Step 6
    In a large frying pan, heat the two cups of oil on medium-high heat. Remove your fonio balls from the freezer and gently roll them into the egg mixture and carefully place into the pan. Fry in batches for about 1-2 minutes on each side, or until golden-brown. To cool, place on a plate lined with a paper towel.
  • Step 7
    Garnish dipping sauce with cured sumac + enjoy! 🎬
